Olive Oil
Can Axartell has 800 years of history, marked by viticulture and olive oil production. Spread over 40 hectares, there are about 2,000 olive trees, most of which are as old as the estate, and studies show that many are thousands of years old.
In the '50s and '60s, the estate was a natural Majorcan cement factory. Nowadays, the new mill is located inside the old factory, which was recovered and restored to produce the oil on the estate surrounded by olive trees.
The decisive factor for the quality of the "Oli d'Oliva Verge Extra Ecològic" is that the modern oil mill is located on the estate, allowing direct control over the extraction process. In addition, it is essential to remark that the olive centrifugation in the new oil mill is done by cold pressing. In this way, we give these olive trees the respect they deserve, and all of them are cultivated ecologically.
L'Oli D'oliva Verge Extra Can Axartell is DO Oli de Mallorca certified organic without artificial additives. The olive varieties used to produce our oil are Mallorquina, Arbequina, and Picual.
The peculiarity of many of these olive trees and, above all, the production of Mallorcan olives is that they are unstable as far as the show is concerned; one year, they can produce a large quantity, and the following year it can be very low. The season for the olive trees starts when the harvest is finished in Can Axartell, more or less in October.
Tasting notes:
The color of Can Axartell oil is a greenish yellow of great intensity. The aroma is fruity, intense, and fresh, with a green apple aroma. A more elegant aroma can be perceived when the glass is warmed slightly.
Its palette texture is buttery, with a slight spiciness at the end that gives it character. In the mouth, it is smooth, delicate, pleasant, and balanced. It is also reminiscent of green almonds.
It can be paired very well with the typical Mallorcan "Pa amb Oli" in salads and can be very good in a fruit salad, with chocolate, pastries and can also be served as a final dressing for fish such as tuna or John Dory to enhance its flavor.
